Apple Cookies
I made gluten and dairy free apple cookies, I was inspired simply by seeing some pretty looking cookies online and decided I needed to make them.
Supplies
-4 cups any gluten-free flour
-2 tsp ground cinnamon
-2 tsp ground ginger
-1 tsp grated nutmeg
-1 pinch salt
-1 pinch ground gloves
-2 cups plant based butter
-1/2 cup granulated sugar
-6 Tbs brown sugar
-2 Tbs molasses
-1 Tbs grated ginger root
-1 tsp vanilla extract
-2 eggs
-4 small apples
Preheat oven to 325 degrees F. And line a backing sheet with parchment.
In a bowl sift together the flour, cinimon, ground ginger, nutmeg, cloves and salt and set aside.
In an electric mixer, cream butter till light. Then add granulated sugar, brown sugar, molasses, and grated ginger and mix until fluffy. Then add eggs and mix until fully combined.
Add in flour mixture to the butter mixture in about quarter increments until combined.
Thinly slice apple crosswise to show the star in the core. Take dough and shape into balls about 3 tablespoons big and place on baking sheet 2 inches apart. Then take apple slice and evenly press it into the dough ball flattening it slightly onto the pan. You can sprinkle sugar over the top before putting in the over for about 14 minutes or until golden brown on the edges. Enjoy!
