Chicken and Crunchy Cucumber Salad

1 cup of shredded cooked chicken breast

2 cups shredded romaine or leaf lettuce

1 tablespoon fresh Cilantro

1 cup of Japanese cucumber

2 boiled eggs

1 cup of chopped tomatoes

Black Pepper

2 tablespoon crunchy garlic

3/4 reduced calorie balsamic vinaigrette salad dressing.

. In a large bowl toss together chicken, cucumber, shredded romaine / lettuce and chopped tomatoes.

. Season to taste with salt and pepper. Add eggs. Drizzle salad dressing over salad mixture and add crunchy garlic and fresh Cilantro.

I always have crunchy garlic to be eaten with soups and salad. This is my favorite salad recipe. Easy and tasty.
