Melt in Your Mouth Carrot Cookies With Orange Glaze
Don't let the word "carrot" turn you away, and the taste of these cookies are far different from the taste of a carrot cake. These soft cookies are paired perfectly with the citrusy, orange glaze which simply melt in your mouth making you crave more. They are a childhood favorite of mine.
Supplies
For Cookies
1 Cup Butter (Softened)
¾ Cup Granular Sugar
1 Egg (room temperature)
1 teaspoon Vanilla
Zest from ½ an Orange (optional)
1 Can Mashed Carrot
2 Cups Sifted Flour
2 teaspoons Baking Powder
¼ teaspoon Salt
For Glaze (Not Pictured)
1 ½ Cups Powdered Sugar
3 Tablespoons Orange Juice
Orange Zest (optional - I use zest from 2 oranges)
You will need mixer, 2 bowls for mixing (1 for wet and 1 for dry ingredients), measuring cups and spoons, parchment paper, cookie sheet(s), tool or spoon to juice oranges, tool to zest orange, cooling rack, and a cookie dough scoop.
Preheat oven to 375℉
Drain the can of carrots, mash them, and set aside. Cream together ¾ cup of sugar and 1 cup butter.
Add 1 egg, 1 teaspoon vanilla, and ½ an orange worth of zest and mix together.
Add the mashed carrots and mix again.
In a separate bowl mix together 2 cups of sifted flour, 2 teaspoons of baking powder, ¼ teaspoon of salt.
Slowly add the flour mixture into the carrot mixture and mix well.
At this point you can refrigerate the dough for an hour or two, but I do not.
Scoop dough (about a tablespoon or slightly larger) onto a parchment paper lined baking sheet and bake for 11 minutes or until edges are golden brown, but centers are still a little soft. Place baked cookies on a wire cooling rack and let them cool completely.
Once cooled, combine 1 ½ cups powdered sugar, 3 tablespoons orange juice, and the zest of 2 oranges.
Dip each cookie in the glaze and place back on the cooling racks to dry.
