Red Velvet Cupcake With Cream Cheese Frosting
Hi everyone!
Today I wanna share this recipe I got from a workshop I attended years ago. It was a small class of people trying to learn how to bake cupcakes.
My best friend and I saw this workshop online and we decided to sign up to attend the Saturday class.
I don't know about you, but I'm not a fan of food coloring. I think it's weird to eat red bread/cake. However, my younger brother loves red velvet so I made this especially for him.
Supplies
cake flour 2 1/2 cups
white sugar 1 1/2 cups
baking soda 1 tsp
salt 1 tsp
cocoa powder 1 tsp
evaporated milk 1 cup
eggs 2 pcs
vinegar 2 tsp
vegetable oil 1 1/2 cups
red food coloring 2 tbsp
vanilla extract 1 tsp
Here's How to Make It:
- Sift together the dry ingredients: cake flour, baking powder, baking soda, salt, and cocoa powder.
- Get another bowl for wet ingredients. Whisk together eggs, oil, milk, vinegar, food color, and vanilla until incorporated.
- Using a hand whisk, mix together wet ingredients to the dry ingredients by "well method", until smooth and no lumps are visible.
Time to Bake My Dear!
Transfer to muffins cups about 3/4 full, you don't wanna fill it up all the way because the mixture will puff.
Bake at 350 F (180 C) for about 20-25 minutes or until the toothpick inserted comes out clean.
Set Aside to Cool Off
Now that our cupcakes are almost ready, set it aside to cool off before you apply the cream cheese frosting.
Okay, It's Time to Make the Frosting!
Here are the ingredients:
butter 1 cup
icing sugar 1 cup
cream cheese 1 bar
vanilla extract 1 tsp
almond extract 1/2 tsp
- Bring ingredients to room temp.
- Put everything in a food processor and mix until smooth.
- Transfer to bowl and chill until set.
- Using a paddle attachment, set cream icing at medium speed until soft peaks form.
Enjoy the Fruit of Your Labor!
I can't really enjoy the fruit of my labor since I don't eat red cakes. So I brought it home to my brother and he enjoyed it a lot!
