Soft and Chewy Chocolate Chip Lava Cookies
Today, I’m going to show you how to make a Chocolate Chip Lava Cookie. 🍪🍫
When you break it in half, the rich chocolate lava inside flows out beautifully. I’ll also show you at the end how to style it in 3 different ways to make it look extra pretty.
Let’s get started! 😄🐧
Supplies
Ingredients
- All purpose flour 350g
- Butter 250g
- Egg 3
- Brown Sugar 150g
- White Sugar 50g
- Cooking Chocolate 250g
- Chocolate chips 100g
- Kit Kat Chocolate 50g
- Coffee flavored Milk Chocolate 50g
- Milk chocolate 50g
- Fresh Milk 100ml
- Backing powder 1½ tsp
- Vanilla 2 tsp
- Pinch of Salt
- Icing Sugar 120g
- Piping bag 3
Cookie Mixture Preparation
First, I prepare the dough needed to make the cookies. I take the butter and soften it well.
This step is very important because the butter is cold, so it must be properly softened until it reaches room temperature. Softening the butter well helps everything mix smoothly.🧈
After the butter has softened well, I add the brown sugar and white sugar. Once added, I mix everything thoroughly until the sugars are well combined with the butter. 🍚
After finishing the mixing, I add three eggs to the mixture. Then I add the vanilla and mix everything again until it is well combined. 🥚
Next, I take the flour and add the baking powder and salt. I mix the flour well so that the baking powder and salt are evenly incorporated.
After that, I gradually add the flour mixture to the cookie mixture and mix it until the mixture becomes thick and well combined.
Once it is well mixed, you will see a nice, thick, light yellow mixture forming. 🥣
Next, add the chocolate chips and break a piece of Kit Kat chocolate into small chunks and add them to the mixture. Then mix everything again until the chocolate pieces are evenly distributed.
Once it is well mixed, you will be able to see a nice dough with chocolate chips evenly mixed throughout.
Now, we need to keep the cookie dough mixture in the refrigerator for about 20 minutes. ❄️
Prepare the Chocolate Ganache for the Filling
Alright, while our cookie dough is chilling in the refrigerator, let’s prepare the chocolate filling for the center.
For this, we need cooking chocolate and fresh milk . I melted the chocolate using double boiler, but if you prefer, you can also melt it in the oven. 🥛🍫
I used a wide, shallow bowl for the double boiler and a small glass bowl for the cooking chocolate. ♨️
I placed the glass bowl on top of the hot water bowl and gently melted the chocolate while stirring with a spoon. After it started to melt, I added some fresh milk and mixed it well until smooth.
Once everything is mixed well, you’ll be able to see a nice, thick chocolate mixture just like the one shown in the photo.
After that, place this chocolate mixture in the refrigerator for about 30 minutes. ❄️
After keeping the chocolate mixture in the refrigerator, you’ll notice that it has firmed up nicely. Then take it out and roll it into a few small balls using your hands.
These chocolate balls will go in the center of the cookies, so don’t make them too large. Just shape a few balls of a moderate size so they fit perfectly.
The chocolate balls also need to be kept in the refrigerator for about 10 minutes. ❄️
Cookie Dough Preparation
Take the chilled cookie dough out of the refrigerator and place it on a tray lined with parchment paper for easy baking. Arrange several dough balls on the tray.
Once the balls are ready, use your thumb or a small spoon to make a small hollow in the center of each ball. This will create space to place the chocolate balls we prepared earlier.
Time to Bake!
Alright, I took the chocolate balls we prepared earlier out of the refrigerator and placed them in the center of the cookie dough balls. Then, I covered the chocolate balls with a bit of cookie dough mixture so they are completely hidden inside. After that, the cookies are ready to be baked in the oven.
We can bake about 4 cookies at a time in the oven at 365°F (185°C) for 12–14 minutes. ⏱️🔥
Perfectly Baked Lava Cookies
Wolaaa..... after baking, we now have these beautiful golden brown cookies. You can see that when you break one open, the melted chocolate filling flows out nicely. 😍
They look incredibly delicious just looking at them makes your mouth water. 🤤
Now that our cookies are perfectly baked, let’s move on to decorating and finishing them beautifully.
Decoration Part
Alright, now we’re getting ready to decorate the cookies.
For this step, I’m using the same chocolate filling we prepared earlier for the center of the cookies. Since it was kept in the refrigerator, we need to melt it again using the double boiler method until it becomes smooth.
In the same way, melt the coffee flavored milk chocolate as well. I won’t explain this step again in detail since I showed it earlier. ☕🍫
Once both types of chocolate are melted and ready, transfer the melted chocolate into two separate piping bags.
After that, take one piping bag filled with melted chocolate and drizzle it around each cookie.
I’ve shared a couple of videos along with some photos showing how I did it, so feel free to follow that or decorate the cookies in your own style. Use your creativity and have fun with it. 🎨
Some Cookie Decorations
After drizzling both types of chocolate on the cookies, I placed two small dollops of coffee milk chocolate on top to make them look even prettier. I decorated two cookies this way.
Next, I took two more cookies and added a bit more cooking chocolate around the edges so it would stand out. Then, I placed a piece of Kit Kat bar on top of each cookie for a nice finishing touch . I also added some small chocolate bits to make them look even more attractive. 🍪
Now we have cookies decorated with two types of chocolate, and they look absolutely beautiful. 🍪😍
Making a Cute Penguin Face
Next, I decided to make a cookie shaped like a penguin. To decorate it nicely, I needed some icing, so I prepared a small batch of icing. This was just an additional step I chose to do. 🐧
I’ll briefly explain how I made the icing. For this, I needed some butter and icing sugar 🍚
First, you need to soften the butter well in a bowl. While the butter is softening, gradually add the icing sugar. The amount you add depends on how much icing you want to make.
Mix everything thoroughly until it’s smooth. After that, you’ll be able to see your icing ready to use.
After that, I put the icing into a piping bag. Just like before, I covered tops of the cookies from melted cooking chocolate. Then I neatly piped a heart shape on the cookie using the icing. You can clearly see this in my photo. This heart shape is what I use for the penguin’s face. 🐧🤍
Cute Penguin Face Cookie
Finally, this is my penguin after I finished decorating it nicely. For the eyes, I placed two chocolate chips. For the nose, I used a Orange color chocolate ball cut into a V shape. For the hands, just like how I made the chocolate balls earlier, I shaped two hands, kept them in the refrigerator, and then attached them.
So this is the final look. I believe it looks really beautiful. 🐧
The Sweet Final Look
This is the final look of the beautifully styled cookies I finished making. Even though it took a lot of effort to make them, once you see how beautiful they are and taste how delicious they are, all that effort feels totally worth it.
You should try making these too, and remember the amazing taste they have. 🐧🍪
