Spicy Malvani Chicken Cury

Chicken curry is one of the most comforting dishes you can make. In India, you can find hundreds of recipes for chicken curry depending on which part of the country you are in. Some are slow cooked, some really spicy, some creamy — no matter how they’re made, they’re all packed with flavour. Here is a recipe for a super quick, Easy Spicy Malvani Chicken Curry that you can put together even on a weeknight.

Here is a recipe for a super quick, Easy Spicy Malvani Chicken Curry that you can put together even on a weeknight.

Ingredients : 1 kg chicken, cut into medium sized pieces

For the curry:

80 ml of water

3 Tbsp of refined oil

3 onions, finely chopped

A handful of grated coconut

A handful of coriander leaves


For the malvani masala:

1 bay leaf
1/2 nutmeg

6-7 cloves

6-7 dry red chillies

10 black peppercorns

1 large cinnamon stick

1 tsp cumin seeds

1 tsp coriander seeds

1 tsp red chilli powder

1/2 tsp turmeric powder

For the coconut masala paste:

3 green chillies

5-6 garlic cloves

1 grated coconut

3/4th inch of ginger

Method:

Dry roast all the ingredients of the Malvani masala in a pan and coarsely grind them.
Then grind all the ingredients of the coconut masala into a paste.

In a kadhai( Cooking Pot), heat oil, add the onions and the ground coconut masala.

Stir and cook for about 10 minutes.

Add 3-4 tsp of the ground Malavani masala, red chilly power and salt to taste.

Mix in the chicken and then water.

Cover and let it cook on low flame for about 40 mins till the gravy thickens and the chicken is tender.

Garnish with chopped coriander leaves and grated coconut.

Serve hot.
